Vegetarian Nasi Goreng

Ingredients for 4 servings:

  • 2 carrots
  • 1 red bell pepper(s)
  • 2 zucchinis
  • 1 stalk(s) leek
  • 200 g vegetable onions
  • 2 garlic cloves
  • 30 g ginger
  • 5 tbsp oil (peanut oil)
  • 2 eggs
  • 125 g basmati
  • 2 tsp sambal oelek
  • 2 tbsp Soy sauce (Ketjap Manis)
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cook the rice and set aside. Wash and trim the vegetables and cut into equal-sized pieces. Peel and finely chop the onion. Peel and chop the garlic. Peel and slice the ginger. Whisk the eggs with the sambal oelek and ketjap manis. Heat 2 tablespoons of peanut oil in a wok and fry the ginger and garlic for 2-3 minutes. Add the bell pepper, carrots, onion, and leek and fry for another 2 minutes. Finally, add the zucchini. Heat the remaining oil in a pan and fry the rice. Add the vegetables and pour the egg mixture over them. Season with salt and pepper and serve immediately.
