Vegetarian Pepper-onion-leek Quiche
The perfect vegetarian pepper-onion-leek quiche recipe with a picture and simple step-by-step instructions.
- 200 g Flour
- 100 g Butter
- 1 Egg (for the dough)
- 2 Eggs (for the topping)
- 2 Salt
- 2 Pepper
- 3 Red peppers
- 3 Small onion
- 0,5 pole Leek
- 120 g Ajvar
- 1 tbsp Tomato paste
- 100 g Creme fraiche Cheese
- 200 g Grated cheese
- 1 shot Mineral water
- Knead a shortcrust pastry out of the butter, flour, an egg, the mineral water and a little salt. Then roll the dough in cling film and let it stand in the refrigerator for 1 hour.
- In the meantime, core the red peppers, wash them and finely dice them together with the peeled onions. Wash the leek and cut only the white part into fine rings.
- Now sweat the vegetables in a pan with the lid closed until they are translucent. Then let cool down a bit.
- In the next step, the shortcrust pastry is rolled out and greased springform pan is lined with it. Prick the bottom of the dough several times and evenly with a fork.
- Mix the vegetables, 2 eggs, cheese, aivar and tomato paste together with the creme fraiche and season with salt and pepper. Spread the mixture evenly in the springform pan and smooth it out.
- Bake the quiche at 180 ° lower and upper heat for about 40 minutes and let cool down a little before serving.
