Vegetarian potato and sausage pan

Ingredients for 2 servings:

  • 8 m.-sized potatoes
  • 1 large onion(s)
  • 4 garlic cloves
  • 1 can tomatoes, chopped
  • 1 pack of feta cheese, approx. 150 – 200 g
  • 1 bag of grated cheese, approx. 150 – 200 g
  • 4 eggs
  • 1 small can/n beans, white, thick
  • 4 small sausages, vegetarian
  • salt and pepper
  • chili powder
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Finely chop the garlic and onion. Peel the potatoes and cut into small cubes. Slice the vegetarian sausages. Add a little oil to a pan and fry the onion and garlic until hot. Add the diced potatoes and fry until lightly browned. Season with salt and pepper, add the diced tomatoes and their juices, then add the sausage slices, season with salt and pepper, and simmer over low heat for about 15 minutes. Remove the pan from the heat, crumble the feta cheese into the dish, add the beans, and stir well. Season with chili powder to taste. Preheat the oven to 200°C (top/bottom heat). Sprinkle the grated cheese over the dish, place the pan in the oven, and let the cheese melt. Once the cheese is well melted, remove the pan, pour the eggs on top of the cheese, and return everything to the oven. Bake until the cheese is browned and the eggs are cooked through. If desired, sprinkle chives over the finished dish.
