Ingredients for 1 servings:

  • 3 eggs
  • 75 ml oil
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 75 g quark
  • 75 g mascarpone
  • 5 tbsp milk
  • 200 g flour
  • 50 g cornstarch
  • 3 tsp, leveled baking powder
  • Fruits (e.g. cherries, tangerines, mango, currants)
  • Chocolate coating or sugar glaze

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Beat the egg whites until stiff. Whisk the egg yolks with the oil, sugar, vanilla sugar, salt, quark, mascarpone, and milk until frothy. Combine the flour and cornstarch with the baking powder, sift over the mixture, and stir in. Fold in the stiffly beaten egg whites. Pour the batter into the greased baking cups and press fruit into the batter, if desired. Bake at 180°C for 20-30 minutes. Decorate the slightly cooled muffins with chocolate coating or icing.
