Vegetarian spelt tarte flambée with sheep's cheese

Ingredients for 2 servings:

  • 250 g wholemeal spelt flour
  • 125 ml water
  • 2 tbsp olive oil
  • 1 pinch of salt
  • 100 g tomatoes, dried in oil
  • 1 bunch of spring onions
  • 150 g sheep’s cheese
  • 1 cup crème fraîche
  • 1 cup sour cream
  • salt and pepper
  • Herbs of Provence

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Mix the spelt flour with water, 2 tablespoons of olive oil, and a pinch of salt. Knead into a dough and roll it out thinly on a baking sheet lined with parchment paper. For the topping, season the sour cream and crème fraîche with freshly ground pepper and salt and spread evenly over the dough. Then, one after the other, arrange the spring onions (cut into small rolls), the sun-dried tomatoes (cut into small pieces), and the feta cheese (cut into small cubes) on the topping. Finally, sprinkle the herbs de Provence on top. Bake in a preheated oven at 250°C (top/bottom heat) for 20 minutes, until the feta cheese is lightly browned.
