Quinoa basic recipe à la Ralf

Ingredients for 4 servings:

  • 250g quinoa
  • 1 carrot(s)
  • 1 stalk(s) Celery
  • 1 tomato(s)
  • 1 tsp vegetable broth
  • 1 bay leaf
  • 2 allspice berries
  • 1 spring onion(s) or onion
  • 2 liters of water

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegetarian, simple, delicious

Wash the quinoa under hot water until the water runs clear. Add all the spices and vegetables to 2 liters of cold water and bring to a boil. Sprinkle in the quinoa and simmer for about 10 minutes. Let it swell for another 10 minutes; all the water should be absorbed by now; you may need to add a little more boiling water. You can then remove the overcooked vegetables or leave them in. I leave them in. Quinoa is delicious in cold salads, as a soup garnish, or as a substitute for rice. It tastes particularly good with tomatoes. I use it with tomato sauce, in tomato salad, or as a quinoa salad with sun-dried tomatoes, feta cheese, and figs.
