Vegetarian stew with green beans

Ingredients for 4 servings:

  • 1 kg beans, green
  • 500 g potatoes
  • 1 onion(s)
  • n. B. garlic clove(s)
  • 1 handful of savory
  • 1 handful of lovage
  • salt and pepper
  • Vinegar
  • Sugar
  • n. B. Oil
  • n. B. water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Finely chop the onions and garlic and sauté briefly in oil. Add the beans and pour in water until the beans are covered. For better flavor, add the savory, uncut (so it can be removed more easily before eating). Add salt and simmer on low heat for about 30-45 minutes. Meanwhile, dice the potatoes and simmer in a separate pot for about 15 minutes. When the beans are as firm as you like them, season the stew with pepper, vinegar, sugar, and sweet and sour lovage. Remove the savory. Add the potatoes, stir, and you’re done.
