Vegetarian stuffed peppers

Ingredients for 4 servings:

  • 4 bell peppers
  • 200 g feta cheese
  • 80 g quark
  • 80 g crème fraîche
  • 2 eggs
  • 1 tsp basil, fresh, finely chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the peppers, cut off the tops, and scoop out the seeds. Cut the feta into small cubes and place them in a bowl. Mix with the quark, crème fraîche, and eggs. Stir in the basil and season with salt and pepper. Fill the peppers with the quark and feta mixture, replace the pepper tops, and place them in a baking dish. Bake in a preheated oven at 200°C (top/bottom heat) for about 30 minutes. This recipe goes well with long-grain rice and a simple tomato sauce.
