Vegetarian vegetable stew with sweet potato

Ingredients for 4 servings:

  • 1 sweet potato(s)
  • 1 onion(s)
  • 1 garlic clove(s)
  • 200 ml vegetable stock
  • 1 bell pepper(s)
  • 1 zucchini
  • 5 tomatoes
  • 3 cm tomato paste
  • salt and pepper
  • 2 tbsp paprika powder
  • Thyme
  • 2 tbsp oil, more if needed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the sweet potato and slice or grate it thinly. Peel and dice the onion. Peel the garlic clove. Wash and trim the bell pepper, tomatoes, and zucchini, then cut them into cubes or small pieces. Heat the oil in a large pot and fry the sweet potato slices. Add the diced onion, and more oil if needed. Press in the garlic clove. Once everything is slightly browned, add the vegetable stock. Add the bell pepper, tomatoes, and zucchini. Cook until everything is as soft as you like. Stir in the tomato paste. Add paprika, thyme, salt, and pepper. This goes well with pasta, rice, or baguette.
