Vegetarian walnut and pepper meatballs

Ingredients for 2 servings:

  • 1 onion(s), finely diced
  • 1 clove(s) garlic, finely diced
  • e.g. cumin
  • e.g. chili flakes
  • 1 bell pepper(s), red, diced
  • 2 handfuls of walnuts, roughly chopped
  • 1 roll, stale, soaked
  • 1 egg(s)
  • 1 tsp, leveled salt
  • 1 handful of oat flakes to bind, if needed
  • some flour
  • Sunflower oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Sauté the onion in a little oil until translucent. Season with garlic, cumin, and chili flakes to taste. Add the diced bell peppers and fry briefly. Let cool slightly. Mix all ingredients except the flour and oil. If the mixture isn’t yet pliable, add more oatmeal or breadcrumbs. Form the mixture into small, flat patties. Lightly coat them in flour. Fry the patties in a pan in a little hot oil until they feel firm. The patties can be used to make burgers or other filled flatbreads with lettuce, tomatoes, and yogurt sauce. The patties also taste delicious cold.
