Ingredients for 1 servings:
- 1 tsp olive oil
- 1 onion(s)
- 1 garlic clove(s)
- 3 tomatoes
- 1 bell pepper(s)
- 2 eggs
- salt and pepper
- Paprika powder
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Vegetable pan with egg
Finely chop the onion and garlic clove and fry in a little oil until translucent. Dice the tomatoes and bell pepper and add to the onions. Simmer well and season to taste. Crack the two eggs over the pan. Cover and simmer until the eggs are cooked to your desired consistency. The egg whites are firm but the yolk is still runny. If desired, you can also add pasta/tortellini (as shown in the picture).
