Ingredients for 1 servings:

  • 1 kg apples
  • 150 g sugar
  • 2 tsp vanilla sugar
  • 2 tsp orange sugar
  • 1 pinch of salt
  • 150 g hazelnuts
  • 50 g walnut kernels
  • 100 g almonds, chopped
  • 100 g apricot(s), dried
  • 100 g fig(s), dried
  • 500 g flour
  • 2 tsp baking powder
  • 1 tsp, heaped gingerbread spice
  • 1 tsp, smothered cinnamon
  • 50 g red wine
  • 50 g egg liqueur
  • Hazelnuts, ground, for the mold

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 55 minutes; Total time approx. 5 hours 10 minutes

with apricots and figs, for 2 loaves

Peel and coarsely grate the apples. Mix the grated apples with the sugar and let it sit for at least 4 hours. In the meantime, slice the apricots and figs, leaving the nuts whole, then mix them with the apples along with the remaining ingredients. Pour the batter into two greased loaf pans sprinkled with ground nuts, smooth the surface, and bake at 170°C (350°F) for about 55 minutes. Test with a skewer if done. Let the apple bread cool on a wire rack, then wrap it in aluminum foil and store. The bread tastes great on its own or with butter and jam.
