Viennese cardinal cuts

Ingredients for 1 servings:

  • 7 eggs
  • 250 g sugar
  • 60 g powdered sugar
  • 60 g Flour, smooth
  • ¼ liter whipped cream
  • 1 tbsp instant coffee powder
  • 1 packet of vanilla sugar
  • e.g. apricot jam

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

For the first batter, beat 5 egg whites until stiff peaks form, then mix with the sugar and stir to form a stiff peak. For the second batter, combine 5 egg yolks, 2 whole eggs, powdered sugar, and flour into a light sponge mixture. Spread alternating white and yellow stripes from both batters onto a baking sheet lined with baking paper, or pipe them onto the strips using a piping nozzle. Bake in a preheated oven at 170°C for about 30 minutes. Once cooled, remove the paper and carefully cut the strips. Spread them thickly with apricot jam and sandwich them together with a mixture of whipped cream flavored with instant coffee and vanilla sugar.
