- Cake icing (lemon and chocolate icing)

Prepare a shortcrust pastry from the listed ingredients and chill for about 45 minutes. Then, in portions, roll out the dough thinly on a well-floured board, dusting lightly with flour, and cut out rectangular biscuits. Place these on a baking sheet lined with baking paper and bake at 160°C (320°F) for 8-10 minutes until light golden brown. Once cooled, sandwich two biscuits together with your choice of jam and pipe a waffle pattern on top with the icing.
