Vinegar dumplings with mountain cheese

Ingredients for 4 servings:

  • 300 ml vegetable stock
  • 6 tbsp white wine vinegar
  • 1 ½ tsp sugar
  • Salt
  • Black pepper, freshly ground
  • 6 tbsp vegetable oil
  • 500 g dumplings (bread dumplings)
  • 200 g mild mountain cheese, thinly sliced
  • ½ bunch radishes
  • 1 bunch of chives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Using leftover bread dumplings

Mix lukewarm vegetable stock with vinegar, sugar, salt, and pepper in a bowl. Let the marinade stand for about 5 minutes until the spices have dissolved, then whisk in the oil. Meanwhile, cut the dumplings into 1/2 cm thick slices and place in a shallow dish. Cut the cheese into strips about 1 cm wide. Wash and trim the radishes and cut or grate them into thin slices. Spread the radishes and cheese on the dumpling slices, pour the marinade over them, mix carefully, and let stand for about 5 minutes. Rinse the chives, shake dry, cut into fine rolls, and sprinkle over the dumplings just before serving.
