Ingredients for 1 servings:

  • 30 g violet flowers
  • 1 liter vinegar (white wine vinegar)

Instructions

Working time approx. 15 minutes; Rest period approx. 6 days 10 hours; Total time approx. 6 days 10 hours 15 minutes

Mix the unwashed violet petals with the vinegar and let them stand in a tightly sealed container in a sunny spot for 8 days. Shake the jar briefly every day. Pour the vinegar through a sieve and then strain it through a coffee filter. The vinegar will now turn violet and be a real highlight both in terms of taste and appearance. Use only a few drops at a time, as the flavor is very intense. It pairs perfectly with freshwater fish, veal, pork fillet, mussels, and salads with flowers, such as zucchini blossoms or watercress blossoms.
