Wash the gooseberries and remove the blossoms and green stems. Mash with a potato masher or puree with a hand blender. Mix with the gelling sugar in a saucepan and let it draw juice for about 1 hour. Peel and slice the bananas. Peel and slice the kiwi fruit, then add both to the saucepan. Add enough apple juice to make 2000g of the total mixture. Puree thoroughly with a potato masher or hand blender until the mixture reaches the desired consistency. Bring everything to a boil and simmer for at least 4 minutes. Rinse the jars with cold water and fill with hot water. Screw on the lids tightly and let cool upside down. Makes about 8 jars of 250ml each.
