Ingredients for 1 servings:

  • 125 g butter or margarine
  • 50 g sugar
  • 1 sachet of vanilla sugar
  • 1 shot of brown rum
  • some lemon zest, grated
  • 200 g flour, type 405
  • 50 g cornstarch
  • 2 tsp, leveled baking powder
  • ¼ liter of milk
  • Margarine or sunflower oil
  • some powdered sugar

Eggless, tender crispy and juicy

Cream the butter, sugar, and vanilla sugar with a hand mixer. Then add a dash of rum and some lemon zest. Mix the flour, cornstarch, and baking powder and sift them on top. Mix everything well and gradually add the milk until you have a smooth, slightly thick batter. The waffles also turn out very well using soy or rice milk, for example. Grease the waffle iron with a little margarine or sunflower oil and pour about 2 tablespoons of batter into the center. Cook briefly on a low heat, then increase the heat to high until the waffles are nicely browned. Sprinkle with powdered sugar and serve fresh. A delicious variation, especially in autumn: Cut up a few small pieces of apple and mix them into the batter. Finally, dust the wonderfully moist apple waffle with cinnamon and powdered sugar. Batter makes about 9 waffles.
