Ingredients for 2 servings:

  • 125 g butter, very soft (no margarine!)
  • 2 pinches of salt
  • 75 g sugar, possibly 100
  • ½ lemon(s), unsprayed, grated peel
  • 4 egg yolks
  • 125 g flour, sifted
  • 125 ml milk, approx., lukewarm
  • 4 egg whites
  • extra butter for the waffle iron
  • some cinnamon
  • Sugar

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the almost melted butter with a pinch of salt until fluffy, gradually stir in the sugar and lemon zest and continue beating until fluffy. Gradually beat in the egg yolks. Then alternately stir in the sifted flour and lukewarm milk. Finally, very carefully fold in the egg whites, which have been beaten stiffly with a pinch of salt and a teaspoon of water, using a dough spoon. Preheat the waffle iron thoroughly and grease it with a little butter. Pour 2 tablespoons of batter into the center of the waffle iron and close the waffle iron. When the waffles are golden yellow, remove them and immediately dust with cinnamon and sugar. The waffles taste best when eaten warm. This amount of batter makes about 6-8 waffles, depending on the size of the waffle iron.
