Ingredients for 1 servings:
- 125 g margarine
- 100 g sugar
- 1 packet of vanilla sugar
- 2 eggs
- 1 shot of rum
- 200 ml rice milk (rice drink) or soy or oat milk
- 250 g flour
- 0.33 packs of baking powder
- n. B. Oil for greasing the waffle iron
- e.g. jam, powdered sugar, cinnamon sugar, compote…
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Weigh and measure all ingredients. Crack the eggs into a small bowl or cup, and set everything aside. First, briefly mix the room-temperature margarine in a food processor, then add half of the sugar and vanilla sugar mixture and 1 egg. Mix everything well, then add the remaining sugar and the second egg. Mix everything until you have a smooth, lump-free batter. Add the rum and gradually stir in the flour, baking powder, and rice milk. The batter should be smooth and not too thick, but not too runny either. You may not need all of the rice milk. Heat up the waffle iron and brush the surfaces with a little oil. Bake the waffles one after the other, adding more grease as you go. My waffle iron made 6 waffles. Serve with jam, powdered sugar, cinnamon sugar, or compote, depending on your mood, or simply eat it on its own, for example, as a side dish to potato soup. If eating with children, simply omit the rum. Of course, the whole thing can also be prepared with normal cow’s milk if there are no intolerances.
