Walnut and Almond Stars
The perfect walnut and almond stars recipe with a picture and simple step-by-step instructions.
- 125 g Ground walnuts
- 125 g Ground almonds
- 2 Egg white (size M)
- 1 pinch Salt
- 110 g Powdered sugar
- Icing sugar to dust the stars
- 1 tsp Cinammon
- 0,5 tsp Ground lemon peel
- 1 Msp Ground cardamom
- 1 Msp Clove powder
- 1 pinch Filter coffee
- 1 tsp Rose hip jelly or any jelly
- Some liquid butter for brushing the cinnamon star mat,
- Kitchen utensils
- Food processor with whisk and bowl,
- 1 weite beschichtete Pfanne,
- Silicone mat for cinnamon stars (for 42 pieces)
- Disposable piping bags,
- Wooden spoon, brush, spatula
- The cinnamon star baking pan consists of 2 parts. Once from the star-shaped mat, and the second from the template. The star-shaped mat and template for Zimtsterne with the snow hood are used for this. Only the star-shaped mat was used in this walnut star recipe.
- Lightly toast the ground nuts and almonds in a pan without fat, remove and let cool.
- Beat the egg white with the pinch of salt with the whisk of the food processor until stiff, gradually adding the 110 g powdered sugar, tablespoon at a time. Beat this mixture on the highest setting for 5-7 minutes.
- Now add the roasted and cooled walnuts and almonds, the teaspoon of cinnamon, the grated lemon peel, the pinch of cardamom, the rose hip jelly, the pinch of filter coffee and the pinch of clove powder to the egg white sugar mass and mix everything thoroughly with a wooden spoon.
- Let this dough rest for 60 minutes.
- Preheat the oven to 150 ° top / bottom heat.
- In the meantime, prepare the silicone mat for the cinnamon stars. That means: before using the silicone mat for cinnamon stars, clean it with a little washing-up liquid, rinse it thoroughly with clear water and dry it out VERY WtbspL. (This silicone mat is also “dishwasher safe”). Then brush the silicone mat very lightly with a little liquid butter.
- Now pour the rested dough into a disposable piping bag, cut off the tip at the bottom, and inject the dough up to the edge into the silicone baking mold. (If no piping bags are available, 2 teaspoons can be used). Shake this filled silicone baking pan briefly so that the dough can set. Peel off or remove protruding dough residues with a spatula.
- Bake the whole thing on the 2nd rack from the bottom for about 30 minutes.
- Let the walnut and almond stars cool for at least 30 minutes and carefully press them out of the mold.
- Dust the stars with icing sugar and layer them in the biscuit tin. After each layer of walnut and cinnamon stars, there should be parchment paper that has been cut to size and matched to the cookie jar, because otherwise they would stick together.
