Walnut and plum spread

Ingredients for 1 servings:

  • 100 g plum(s), dried (unsulphured)
  • 125 ml water
  • 60 g ground walnuts
  • 1 tsp, heaped cinnamon, ground (*)
  • ½ tsp lemon zest, freshly grated, organic

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 10 minutes

Soak the dried plums in the water overnight (about 8-10 hours). Remove the soaked plums from the soaking water and finely chop them in a blender. Add the other ingredients and blend everything in the blender until smooth. Depending on how dried the plums were, you may need to add some of the remaining soaking water to the spread to achieve a spreadable consistency. The spread is best prepared and eaten fresh. Leftovers can easily be stored in a sealed jar in the refrigerator for 4-5 days. (*)If you don’t like cinnamon like I do, you can halve the amount to start with.
