Walnut Banana Bread

Ingredients for 1 servings:

  • 2 bananas, ripe
  • 50 g sugar
  • 250 g flour
  • 300 g walnuts, 200 g coarsely chopped, 100 g whole
  • 200 g raisins (can be omitted)
  • 2 tbsp oil
  • 3 tbsp milk
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 eggs

Working time approx. 15 minutes; Total time approx. 15 minutes

Bread or cake? That is the question.

Mash the bananas with a fork or use a hand blender to puree them. Add the oil, sugar, milk, and eggs and mix well. Mix the baking soda, flour, salt, nuts (and raisins) and fold into the banana mixture. Pour into a well-greased loaf pan (30 x 11 x 8 cm). Cover tightly with halved nuts. Bake at 200°C (convection oven: approx. 190°C) for 40 minutes (be sure to test for doneness). Hazelnuts or almonds work well instead of walnuts. Water can also be used instead of milk. Delicious with Gouda cheese, honey, or jam. It also tastes good on its own.
