Ingredients for 1 servings:
- 30 g chia seeds
- 50 g walnut kernels, chopped
- 250 g rye flour
- 250 g spelt flour
- 150 g sourdough
- 1 tsp salt
- 7 g dry yeast
- 375 g water, lukewarm

a juicy bread with a nutty crunch
Mix the chia seeds, walnuts, rye flour, spelt flour, salt, and dried yeast in a large bowl. Add the lukewarm water and sourdough starter and knead the mixture thoroughly for 5-10 minutes. Let the dough rise in a warm place for 1 hour. Shape the risen dough as needed and let it rise for another 20 minutes. Preheat the oven to 180°C fan/convection oven. Just before baking, add an additional 100 ml of water to the oven to achieve the ideal moisture level for the crust. Bake the bread for 1 hour, until the crust is dark brown and sounds hollow when tapped. Let the bread cool completely after baking before enjoying. For 16 slices, this contains approximately 149 kcal per slice.
