Walnut chocolate cookies

Ingredients for 6 servings:

  • 250 g walnut kernels
  • 100 g marzipan paste
  • 100 g dark chocolate
  • 3 egg whites
  • 50 g sugar
  • 1 tsp orange zest
  • 2 tsp cocoa powder
  • 75 baking wafers (40 mm or 50 mm)

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Roast the walnuts in the oven at 150°C (top and bottom heat) for about 10 minutes. Then chop the walnuts and chocolate into small pieces. Break up the soft marzipan mixture into a large bowl. Add one-third of the egg whites. Using a fork, press the marzipan mixture into the egg whites and mix until smooth. Beat the remaining egg whites until stiff peaks form, gradually adding the sugar. Stir one-third of the beaten egg whites into the marzipan mixture. Stir in the orange zest and cocoa powder. Finally, fold in the remaining beaten egg whites, the walnuts, and the chocolate pieces. Arrange the wafers on a baking sheet lined with baking paper (about 25-35 wafers per sheet). Using two teaspoons, drop the mixture onto the wafers, using about 1 to 1.5 heaped teaspoons per wafer. Bake in the oven at 180°C (top and bottom heat) (160°C fan-assisted oven) for about 13-15 minutes.
