Ingredients for 4 servings:
- 1 tbsp oil
- 1 large onion(s), red or white
- 4 m.-sized peach(s) or nectarines
- 1 m.-sized carrot(s), red or purple
- 1 garlic bulb(s)
- 200 g beans, white, cooked, possibly from the can
- 1 rosemary sprig(s)
- 1 tbsp honey
- 1 tbsp hoisin sauce
- 1 tsp, heaped mustard, hot
- 4 thick sausages (pork sausages or strong sausages)
- salt and pepper
- 2 star anise

fruity, quick oven dish
Preheat the oven to approximately 190 degrees Celsius (top/bottom heat). Grease an ovenproof dish approximately 20 x 30 cm with oil. Peel the onion, halve it, and cut it into wedges. Wash, halve, and stone the fruit. Wash and trim the carrot, then halve or quarter it lengthwise. Remove the outer leaves from the garlic bulb and halve the bulb horizontally. Drain the beans, rinse them, and let them drain. Wash the rosemary, shake it dry, and pick off the needles. Mix the honey with the hoisin sauce and mustard. Place the sausages in the dish and drizzle with the sauce. Arrange the carrots and half of the rosemary on top. Add the garlic, peaches, onion wedges, and beans, and season with salt and pepper. Add the star anise and bake the dish in the oven for 25-30 minutes, until well browned. Sprinkle the dish with the remaining rosemary to serve. The colorful vegetables and fruit add an interesting visual interest. Depending on your personal preferences, you can increase the amount of sauce and seasoning. We like the dish well cooked, but the vegetables shouldn’t be too soft. Preparation time: approximately 20-30 minutes. Baking time: 25-30 minutes or more, depending on your taste.
