Ingredients for 1 servings:

  • 125 g ground walnuts
  • 250 g flour, type 405
  • 1 tsp baking powder
  • 250 g butter
  • 100 g cornstarch
  • 100 g powdered sugar
  • 1 packet of vanilla sugar
  • 3 tbsp sugar
  • 1 ½ tbsp cocoa powder
  • 3 tbsp milk

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 55 minutes

For 60 pieces

Roast the nuts in a dry pan and let cool on a plate. Mix with the flour, baking powder, powdered sugar, cornstarch, and vanilla sugar. Cut the cold butter into small pieces and add them. Quickly knead with 2-3 tablespoons of cold water until a smooth dough forms. Mix the cocoa and sugar on a large plate. Shape the dough into 4 logs, each about 4 cm in diameter, brush with milk, and immediately roll in the sugar-cocoa mixture. Chill for about 1 hour. Preheat oven to 175°C (top/bottom heat). Cut the logs into approximately 0.5 cm thick slices and place them on a baking sheet lined with parchment paper. Do not pack too tightly. Bake in the oven for about 10-15 minutes until crispy.
