Sauce with ajvar and red lentils

Ingredients for 2 servings:

  • 5 tbsp Ajvar, hot or mild, as desired
  • 2 handfuls of red lentils
  • 2 tbsp tomato paste
  • 100 ml cream, if vegan, replace with vegetable stock
  • 100 g mushrooms, or other vegetables of your choice
  • salt and pepper
  • Broth, granulated
  • some oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Sauté the tomato paste in a little oil, add the mushrooms. Let it brown slightly, then deglaze with cream or (if vegan) a little broth. Mix with ajvar and add the red lentils. Cover and simmer over low heat for about 10-15 minutes, stirring occasionally. The lentils will break down and won’t be noticeable in the finished sauce. Finally, season with salt, pepper, and granulated broth. This makes a delicious, creamy, thick sauce that goes perfectly with rice or noodles; we also served it with fried smoked tofu.
