Walnut fried potatoes

Ingredients for 2 servings:

  • 400 g potatoes, small
  • 1 m.-large onion(s), red
  • 50 g walnuts
  • 2 tbsp clarified butter
  • some salt and pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Wash the potatoes and then boil them in plenty of salted water until tender. In the meantime, peel and finely dice the onion. Roughly chop the walnuts. Drain the potatoes, rinse, peel, and cut into pieces. Heat the clarified butter in a suitable pan and fry the potato pieces until crispy and golden brown. Add the diced onion and walnuts and fry briefly. Season with salt and pepper. Sprinkle with parsley and serve.
