Walnut gingerbread

Ingredients for 1 servings:

  • 3 eggs
  • 150 g sugar
  • 70 g brown sugar
  • 1 pinch of salt
  • 3 drops of bitter almond flavor
  • 3 drops butter-vanilla flavoring
  • 1 tbsp gingerbread spice
  • 125 g ground walnuts
  • 50 g walnuts, chopped
  • 125 g ground almonds
  • 50 g almonds, chopped
  • 100 g candied fruit (e.g. papaya, melon, cherry, candied orange peel, lemon peel)
  • 2 tbsp cream
  • 1 pack of wafers (70 mm)
  • 2 cups of chocolate coating

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Beat the eggs with the sugar and a pinch of salt until a thick, white cream forms (takes a few minutes). Then stir in the flavorings and the gingerbread spice. Add the ground walnuts and almonds and fold in (do not use a mixer). Finally, fold in the candied fruit and chopped nuts. If the batter becomes too tough, add a little cream. Place about 1 heaped teaspoon of the mixture on the wafers, leaving a small edge free, as the batter will spread slightly during baking. Bake the gingerbread for 15 minutes at 180°C (fan oven). The gingerbread will still be soft when they come out of the oven and will firm up as they cool. Cover the gingerbread with chocolate coating and decorate as desired.
