Walnut ice cream with beet syrup

Ingredients for 6 servings:

  • 2 g egg(s)
  • 50 g brown sugar
  • 450 ml cream
  • 250 ml milk
  • 150 g walnuts, roughly chopped
  • 50 ml beet syrup or maple syrup
  • some walnuts, halved or biscuits for decoration

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

A dream for the ice cream machine

Whip the cream until stiff peaks form. Beat the eggs over a double boiler until frothy. Gradually add the sugar and continue beating until the sugar has completely dissolved and the mixture is creamy and glossy. Add the cream and milk and fold in until well blended. Finally, pour in the syrup. Mix well again and pour the mixture into the ice cream maker. The ice cream should take 40-50 minutes to prepare, depending on the manufacturer’s instructions. Finally, add the walnuts and stir until they are well distributed throughout the ice cream. Pour the finished ice cream into glasses and decorate with a little warmed syrup and a walnut half or small cookies.
