Walnut ice cream with maple syrup

Ingredients for 4 servings:

  • 2 egg yolks
  • 120 g sugar
  • 1 vanilla sugar
  • 100 g walnuts
  • 250 ml milk
  • 200 g whipped cream
  • 4 cl maple syrup

Instructions

Working time approx. 25 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 25 minutes

Whisk the egg yolks and sugar until creamy. Heat the milk, add it to the egg and sugar mixture, and mix well. Heat the mixture again until the egg yolks thicken; do not allow it to boil. Chill thoroughly, preferably overnight in the refrigerator. Chop the walnuts, lightly toast them in a pan, and let cool. Fold the whipped cream, walnuts, and maple syrup into the chilled mixture and pour into the ice cream maker. The mixing time depends on the machine.
