Walnut Parfait with Apple Crumble

Ingredients
 

Parfait

  • 100 g Sugar
  • 200 g Walnuts
  • 2 Eggs
  • 80 g Sugar
  • 300 g Whipped cream

Apple Crumble

  • 300 g Tart apples
  • 100 g Sugar
  • 75 g Butter
  • 150 g Flour
  • 60 g Sugar

Instructions
 

  • Caramelize the sugar in a pan and add the chopped walnuts so that they are coated with the caramel. Then place the mixture on a greased tray and let it cool down.
  • Whip the cream until stiff and refrigerate.
  • Chop the nut brittle. Beat the eggs in a bain-marie until they are thick and frothy and carefully pour in the sugar. Then beat in a cold water bath until cold. Carefully fold the brittle and the whipped cream into the egg mixture. Pour the whole thing into a form lined with cling film and freeze for at least 7 hours.
  • Peel the apples, chop them into small cubes, mix with the sugar and pour into mason jars.
  • Melt the butter and mix the flour with the sugar. Then pour the melted butter over it and use the hand mixer to make crumbles. Place the crumble on the apples and bake in the oven at 160 degrees (convection) for about 15–20 minutes.
