Ingredients for 4 servings:

  • 50 g walnuts
  • 50 g breadcrumbs
  • 2 garlic cloves
  • 50 ml vegetable stock
  • 1 tbsp olive oil
  • 50 ml vinegar or lemon juice
  • Salt
  • 1 tbsp olive oil
  • ½ tsp paprika powder

Working time approx. 15 minutes; Total time approx. 15 minutes

Tarator

Grind the walnuts, breadcrumbs, and garlic into a paste in a mortar or blender. Then add enough broth to make the mixture the consistency of thick yogurt. Add the olive oil, vinegar, or lemon juice, sprinkle with salt, and mix everything together. Empty the tarator into a bowl, pour over the olive oil, and sprinkle with the paprika. Tip: This sauce can be served as a dip and tastes delicious with cooked vegetables or fish.
