Ingredients for 2 servings:

  • 12 wontons
  • 2 tbsp peanuts, crushed
  • 2 tbsp coriander, chopped
  • 4 tbsp chili flakes
  • 1 tsp Szechuan pepper, ground
  • 4 tbsp vegetable oil
  • 3 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 tbsp garlic
  • 1 tbsp raw cane sugar
  • 1 tbsp sesame oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 22 minutes

in a sauce made from rice wine vinegar and chili oil

Steam the wontons for 7 minutes. Meanwhile, for the sauce, briefly toast the chili flakes and Sichuan peppercorns in a small saucepan without oil, then add the oil and heat briefly. Remove the pan from the heat, add the oil to the remaining ingredients in a bowl, and whisk well. While still warm, stir the sauce into the wontons. Divide the wontons between two bowls and garnish with peanuts and coriander.
