Warm carrot salad to fill you up

Ingredients for 2 servings:

  • 4 large carrots, peeled
  • 2 tbsp cream cheese (spreadable) with yogurt
  • 100 ml milk or water
  • 2 tbsp herbs, dried
  • 4 tomatoes, dried, pickled
  • 30 g peanuts, roasted, salted
  • 1 dash of oil (walnut oil)
  • Salt
  • garlic powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the carrots without adding salt until al dente (not too soft). Let them cool and slice them thinly. Mix the cream cheese, herbs, and milk or water into a smooth sauce. Finely chop the sun-dried tomatoes. Chop the peanuts. Combine the carrots, tomatoes, and peanuts, then stir in the sauce. Mix everything well. Season to taste with salt and garlic powder. Let it stand for 5 minutes and serve. Tastes best lukewarm. Serve with a good, simple, whole-wheat bread and butter.
