Ingredients for 4 servings:
- 12 slice(s) ham, cooked
- 500 g mushrooms, white, brown or mixed
- 1 large shallot(s)
- 3 eggs
- 150 ml cream
- 70 ml white wine
- Herbs, fresh or frozen
- Salt and pepper, for seasoning
- Oil, for frying

Wash the mushrooms, remove the stems, and then cut the heads into quarters or eighths, depending on their size. Finely chop the shallot and lightly brown in oil. Add the mushrooms and fry until there is no more water in the pan. Add fresh herbs for a more delicate flavor. Set everything aside! Take a slice of ham at a time and place about 1-1.5 tablespoons of the mushrooms along the bottom edge. Roll up the ham and place it seam-down in an ovenproof dish. Repeat this process for the entire ham. If there are any leftover mushrooms, simply scatter them around the edge of the dish. Whisk the eggs, stir in the cream and white wine. Mix everything well and season with salt and pepper if desired. Pour the prepared sauce over the rolls, allowing it to run down the sides. The beaten egg should cause the sauce to thicken. Place the rolls in the oven at 180°C for about 15-20 minutes. Serve with lamb’s lettuce and fresh baguette or bread.
