Warm potato salad with bacon and milk sauce

Ingredients for 8 servings:

  • 2 kg potatoes
  • 200 g pork back bacon
  • 2 onions
  • 1 apple, sweet
  • 1 cucumber(s)
  • salt and pepper
  • Paprika powder
  • garlic powder
  • n. B. Flour
  • 1 liter of milk

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Boil or steam the potatoes in their jacket potatoes, peel, halve, and slice them. Finely dice the bacon and fry them completely in a large pan. Then peel and dice the onions and sauté them in the fried bacon. Meanwhile, peel and dice the apple and cucumber and add them to the potatoes in a bowl. Season to taste with salt, pepper, paprika, and garlic powder. Once the onions are sautéed, add the flour and stir until a smooth roux forms. Gradually add the milk and bring to a boil until the sauce is relatively thick (the cucumber will add more water, making it more runny). Pour the sauce into the bowl, mix everything together, and adjust the seasoning if desired. Note: The salad can also be easily reheated in the microwave later.
