Watermelon, avocado, and mozzarella towers

Ingredients for 2 servings:

  • 2 slices of watermelon, seedless, 0.5 cm thick
  • ½ avocado(s)
  • 125 g buffalo mozzarella
  • 1 handful of arugula, small leaves
  • 1 ½ tbsp balsamic vinegar, white
  • salt and pepper
  • 1 ½ tbsp extra virgin olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the dressing, combine the balsamic vinegar with salt and pepper, then whisk in the oil. Peel the melon and avocado and cut into pieces. Drain the mozzarella and slice it. Clean and wash the arugula and spin it dry. Arrange the melon, avocado, mozzarella, arugula, more melon, and avocado in a circle on serving plates, then drizzle each with a little dressing.
