Watermelon salad with blueberries and candied ginger

Ingredients for 2 servings:

  • ¼ watermelon(s), seedless
  • 125 g blueberries
  • 1 tbsp ginger, candied in syrup
  • 1 tbsp ginger syrup
  • 1 tbsp orange juice
  • ½ lime(s), the juice

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Peel the melon, remove any remaining seeds, and cut the flesh into bite-sized cubes. Rinse the blueberries and dry thoroughly. Finely dice the ginger. Mix the ginger syrup, orange juice, and lime juice into a dressing, then mix with the melon and ginger cubes and the blueberries. Cover and let it sit in the refrigerator for about half an hour. Season to taste.
