Watermelon salad with feta and arugula

Ingredients for 4 servings:

  • 2 tbsp vinegar, light, mild (e.g. herbal vinegar)
  • 1 lime(s), untreated
  • 60 ml olive oil, mild
  • 1 small red onion or 2 spring onions
  • 1 kg melon(s) (watermelon), diced
  • 200 g feta cheese
  • 1 bunch of mint
  • 1 bowl of arugula
  • e.g. roasted pine nuts or sunflower seeds

Working time approx. 25 minutes; Total time approx. 25 minutes

Pour the vinegar into a small bowl. Grate the zest of the lime and squeeze out the juice. Add both to the vinegar. Stir in the olive oil and add the finely diced onion. Let it marinate while you prepare the rest of the salad. Place the watermelon cubes in a large bowl. Wash the mint, pick the leaves, cut them into fine strips, and add them to the melon. Cut the feta cheese into small cubes and add them as well. Finally, wash and trim the arugula and add it to the salad. Drizzle with the dressing, mix well, and serve immediately. Sprinkle with toasted pine nuts or sunflower seeds just before serving. Tip: The watermelon salad tastes best when the melon is ripe (and sweet) but still firm. Cut it into 1 cm cubes with an extra-sharp knife to prevent it from becoming mushy.
