Watermelon salad with feta

Ingredients for 4 servings:

  • 1 tbsp sesame seeds, black, lightly toasted
  • 500 g melon(s) (watermelon)
  • 180 g feta cheese
  • 300 g arugula
  • 2 sprigs of mint
  • 2 sprigs parsley, flat
  • 2 sprigs of coriander
  • 6 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • 1 tsp syrup, (pomegranate syrup optional)
  • 1 tsp syrup, agave syrup or another sweetener
  • some salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and deseed the watermelon, and cut into bite-sized pieces. Dice the feta. Wash the arugula, spin it dry, and generously trim the stems. Pick the leaves from the washed herb sprigs. Arrange the watermelon, feta, arugula, and herbs on a large platter. Whisk together the oil, orange juice, lemon juice, pomegranate syrup, and sugar. Season with salt and pepper. Drizzle the dressing over the salad. Sprinkle with sesame seeds and serve. Serve with pita bread.
