  • ½ cucumber(s)
  • 1 apple
  • some fennel
  • 3 tbsp natural yogurt
  • 2 tsp lemon juice
  • 1 tsp mustard, medium hot
  • some salt
  • some oil
  • 2 tbsp water
  • some walnuts, chopped

Peel the cucumber and apple (unless they’re organic or homegrown) and dice them. Toss the sliced ​​apples with 1 teaspoon of lemon juice to prevent them from turning brown. Finely chop the fennel. Mix the yogurt, the remaining lemon juice, mustard, oil, salt, and water to create a smooth marinade. Place the apple and vegetable mixture in a bowl and toss with the marinade. Garnish with some fennel leaves and walnuts.
