Ingredients for 6 servings:

  • 400 g beef
  • 300 g lamb
  • 1 onion(s) (vegetable onion)
  • 1 tbsp paprika powder
  • 1 tsp chili powder
  • 1 bay leaf
  • 3 tomatoes (vine tomatoes)
  • 2 carrots
  • ½ celeriac
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • ½ jar red wine
  • 200 ml beer (Guinness Stout)
  • 500 ml meat broth

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Prepare the ingredients: Dice the meat, removing any fat and tendons, and season with paprika and chili. Halve the onion and slice into thin rings. Peel and dice the carrots and celery. Peel and dice the vine tomatoes and finely chop them. Brown the meat and onions in a little oil in batches over very hot heat. Mix the tomato paste, Worcestershire sauce, and red wine, add to the meat (which has been browned thoroughly and returned to the pan), and bring to a boil while stirring. Now add the tomatoes, celery, and carrots and sauté gently. Add the Guinness and bring to a boil, then reduce for about 5 minutes. Add the (boiling) meat stock, reduce the heat to low, and simmer for 1.5 hours, or until the meat becomes stringy and almost falls apart. Serve with dark bread or potatoes and a large mug of beer.
