Gomasio is a seasoning mixture that originally comes from Japan. The word is made up of “Goma” and “S(h)io” and means sesame salt and this mixture consists only of these two ingredients.
Therefore, it is also very easy to make yourself. Mix the sesame and salt in a ratio of about seven to one. For a milder and lower-salt version, you can increase the sesame content to 12 to 15:1. The mixing ratio is primarily a matter of taste.
Before mixing, the sesame can be lightly toasted in a pan without oil until the first sesame seeds burst. If you heat it too long or too much, unpleasantly bitter aromas develop. The seeds are then lightly ground in a mortar and then allowed to cool thoroughly.
Pour the sesame-salt mixture into clean, well-sealable jars. Due to the relatively high fat content, ground sesame goes rancid faster. Therefore, you should only keep the mixture for a few weeks and prepare a new mixture more often. Black sesame can also be used.
Gomasio is very suitable for hearty Asian dishes, but can also add an interesting touch to vegetable or potato dishes. It is also often used as a table seasoning.
