What Kind of Sausage Is the Hamburger Gekochte?

The Hamburger Gekochte is a spreadable cooked mettwurst. The sausage is a regional specialty that can only be produced in and around Hamburg. Hamburger Gekochte consists of 70 percent lean pork and 30 percent fatty pork belly. Half of the pork belly is smoked over beech wood before further processing. This gives the sausage its characteristic aroma and allows it to be spread longer.

The meat is minced in a meat grinder until medium-fine and seasoned with salt, white pepper, coriander, nutmeg, and mace. The meat mass is stuffed into natural casings and hot-smoked at 40 to 50 degrees Celsius. When it has reached the desired color, which can range from light pink to brown, the hamburger is scalded to completion at 75 degrees Celsius.
