Wheat and nut focaccia

Ingredients for 6 servings:

  • 400 g flour
  • 25 g yeast, fresh
  • 500 g red grapes
  • 100 g walnuts
  • 1 tbsp sugar
  • olive oil
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

(Focaccia with grapes and nuts)

Sift flour onto a work surface, make a well in the center, add the sugar and crushed yeast, and pour over lukewarm water (approx. 200-250 ml). Cover with flour and let rest briefly, then knead everything together. The dough should be soft and elastic. Let the dough rise in a warm place for about 1 hour. Meanwhile, remove the grapes from the stems, wash, and dry them. Knead the dough briefly again, add 1 teaspoon of salt, and spread it out on a greased baking sheet (approx. 24 x 32 cm), cover, and let rise for about 30 minutes. Distribute the grapes and walnuts over the dough and bake in a preheated oven (at 200°C) for 35 minutes. Serve warm or cold.
