Ingredients for 6 servings:

  • 250 g semolina (wheat semolina)
  • 1 bunch of flat-leaf parsley
  • 1 bunch of spring onions
  • 2 tbsp hot pepper paste
  • lemon juice
  • oil
  • Salt
  • pepper
  • 1 head of lettuce
  • Water, hot

Turkish semolina salad classic

Place the semolina in a bowl and pour in hot water until everything is covered. After 30 seconds, drain off any excess water. Place a plate on top. Stir occasionally and cover again. In the meantime, finely chop the parsley and the spring onions into thin rolls. When the semolina is cold and soft after a taste, add the paprika paste and stir well. Then add the lemon juice and oil. Not too much oil, so it doesn’t become mushy. Finally, add the parsley and spring onions and season with salt and pepper. If you like it spicy, you can add coarse paprika, which you can find in any Turkish supermarket. Let it sit for 45 minutes and then roll it up in the washed lettuce leaves.
