What oil to use for frying french fries
Which oil you use to fry fries is crucial to the success of the popular side dish. You have a choice of several oils.
- For frying fries you need an oil that can withstand temperatures of 170 degrees Celsius. That’s how hot it gets in a fryer.
- Unsuitable oil cannot withstand these high temperatures and forms smoke. This not only smells unpleasant but is also very unhealthy due to the release of acrolein.
- So keep your distance from native oils. These include rapeseed oil and virgin olive oil.
- Go for refined oils, like refined olive oil. This is more heat resistant.
- Peanut and sesame oil and sunflower oil are also suitable for frying. Their smoke points are also quite high – around 210 degrees Celsius.
