White Bean Salad
The perfect white bean salad recipe with a picture and simple step-by-step instructions.
- 200 g White, dried beans
- 3 tbsp Olive oil
- 2 tbsp Balsamic vinegar
- 1 Red Onion, finely diced
- 1 pinch Raw cane sugar
- Sea-Salt
- Black pepper from the mill
- 2 tbsp Chives rolls
- Soak the beans in cold water overnight. Then pour over a sieve, rinse and put in a saucepan and cover well with cold water. Bring to the boil, then switch to low temperature – skim off the foam and simmer for about 1 – 1 1/4 hours. Try in between, they shouldn’t get too soft, but keep a light bite. Then pour over a sieve, drain and transfer to a bowl.
- Put the olive oil and balsamic vinegar in a bowl, add the finely diced onion, season with a pinch of sugar and salt, stir well and pour over the still warm beans, mix everything well and let it steep for a few hours.
- Just before serving, season with freshly ground pepper and fold in the chives.
